Chum salmon caviar, also known as keta caviar, is a prized delicacy known for its large, firm eggs and exquisite flavor. Wild-caught chum salmon from the pristine waters of Alaska, ensuring a sustainable and eco-friendly harvest. The Copper River in Prince William Sound is renowned as the primary location for the season’s first salmon catch in June. Unfortunately, this year’s (2024) salmon harvest was exceptionally poor, with only a small number of fish caught. The caviar features large, robust eggs with a beautiful translucent, orange-red hue. The eggs are firm and burst delightfully in the mouth, offering a satisfying pop. Chum salmon caviar has a delicate, slightly salty flavor with a hint of ocean brininess, making it a versatile ingredient for various culinary applications.
