Caviar assortment
Red Caviar
We offer red caviar varieties of five different Pacific salmon types including Pink, Chum, Coho and Sockeye. It is easy to confuse the salmon varieties as they all have at least 3 names. Please refer to the table below of salmon varieties.

The size of the grain of roe does not correspond to salmon breed size; while the Sockeye salmon has the smallest grain of roe, it is one of the larger salmon breeds. Vice versa, the Pink salmon is the smallest salmon, yet its roe is not the smallest.
In addition to varieties of salmon breed, we also offer a variety of sizes, preparations and containers in our products. We have chilled roe in aluminum tins as well as in glass jars and frozen salmon roe in plastic trays. The frozen variety will have slightly less salt since it is not needed to be used as a preservative due to its frozen state. We also offer Caviar Spread in a plastic container. It is difficult to give customers suggestions on taste as it is a personal preference. We recommend you try the small sized containers of each salmon variety to understand your own preferences.
Black Caviar
For our black caviar selection we have both bowfin and sturgeon caviar. Bowfin and sturgeon are both ancient fish and produce black colored roe.
Bowfin is a less expensive substitute for the luxurious sturgeon caviar. Bowfin is sourced in the southern regions of the United States. Bowfinâs other names include dogfish, choupique, grinnel, spotail and mud fish. The fish is often referred to as a âliving fossilâ since the fossils discovered from the Jurassic Period are almost identical to current bowfin physiology.
To satisfy those with lavish taste, we have several varieties of sturgeon cured roe. The Russian Ossetra and hybrid breed of Kaluga and Amur sturgeon are our two premium varieties. These are both imported varieties and come in two different sized containers, and do not contain preservatives. We offer a wild American sturgeon variety called Hackleback. This cured roe also comes in two sizes and contains sorbic acid as a preservative.
Price of Caviar
Red salmon caviar cost is considerably cheaper than black caviar. Between the different varieties of salmon roe, generally speaking, the bigger and firmer the grain is the more expensive; usually sockeye is the cheapest and king is the most pricey. Within each variety there are also different grades which also affect the price.
As far as our black caviar price goes, bowfin will be the least expensive, followed by the native hackleback, with Ossetra and Kaluga hybrid premium caviars being the most expensive. The premium varieties are imported and are also more highly sought after, which warrants the higher price tag.
The larger the jar, the better the deal you are receiving on our products. In addition, the more you buy on Fish&Caviar the more of a discount you receive. If your order is $200 or more, you will receive 8% off your order (excluding shipping costs) and when your order $300 or more you receive 10% off your order (excludes shipping costs).
Health Benefits
Red and black roe have their own health benefits and both are healthy and recommended as part of a complete diet due to the high concentration of vitamins and minerals. The main downside in terms of âhealthinessâ when it comes to caviar is the sodium and cholesterol. Fish eggs contain omega 3 fatty acids which increase the good cholesterol (HDL) levels. As with all things, moderation is key, but do not let this scare you away from eating a serving of caviar.
How to Serve?
Caviar can be served on a simple cracker or piece of French bread to make it the star. It can also be used as an accompaniment or garnish on many dishes to elevate them to fine-dining quality. Below are a few suggestion of how you can add caviar to your appetizers or entrees:
