Russia and Iran have access to the Caspian Sea, a source of sturgeon caviar. Due to poaching, most sturgeon caviar is now farmed to prevent the extinction of the fish. Among the different types of sturgeon, Ossetra is known as the Russian sturgeon, because in Russian “Ossetra” literally means ‘that of sturgeon’. Ossetra can be spelled as “Osetra, ”Oscietra,” or “Asetra” or called by nicknames like Danube sturgeon or diamond sturgeon,  but all of these names refer to the Acipenser gueldenstaedtii species, a smaller sturgeon which was the popular choice for Imperial Russia. How does it differ from other black caviar types?
