Colloquially known as swamp trout, bowfin’s rise to fame began with the ban on harvesting of Caspian sturgeon. Kaluga Hybrid Sturgeon Caviar

Kaluga, which is known as the largest fresh water fish, is interbred with the Amur sturgeon to produce this exotic roe.
