Indigenous primarily to eastern United States, bowfin traces its ancestry back to Jurassic period. Colloquially known as swamp trout, bowfinโ€™s rise to fame began with the ban on harvesting of Caspian sturgeon. As access to high quality sturgeon caviar declined bowfin caviar became a great substitute for the more expensive sturgeon. This bowfin caviar, with its small sized roe grains, ranges in natural color from dark gray to black and makes a perfect companion to red salmon caviar at a dinner party.
