Indigenous primarily to eastern United States, bowfin traces its ancestry back to Jurassic period. Colloquially known as swamp trout, bowfin’s rise to fame began with the ban on harvesting of Caspian sturgeon. As access to high quality sturgeon caviar declined bowfin caviar became a great substitute for the more expensive sturgeon. This bowfin caviar, with its small sized roe grains, ranges in natural color from dark gray to black and makes a perfect companion to red salmon caviar at a dinner party.

Really nice caviar, but a little more fishy taste than stugeon caviar. I would definitly get some more for this price!

I’ve never tried bowfin caviar before, and its pretty good. I prefer the sturgeon, of course, but this went down just fine. I would order it again especially for a larger gathering.

Served this caviar at my daughter’s engagement party. Everyone thought it was sturgeon caviar, but I didn’t correct them.
