Indigenous primarily to eastern United States, bowfin traces its ancestry back to Jurassic period. Colloquially known as swamp trout, bowfin’s rise to fame began with the ban on harvesting of Caspian sturgeon. As access to high quality sturgeon caviar declined bowfin caviar became a great substitute for the more expensive sturgeon. This bowfin caviar, with its small sized roe grains, ranges in natural color from dark gray to black and makes a perfect companion to red salmon caviar at a dinner party.
