About red caviar

People have eaten caviar for thousands of years. Northerners and those who lived by the sea had unlimited access to caviar and ate it in vast quantities. As time passed, thanks to Russian tsars who had a taste for exclusive things, caviar evolved into an indulgent delicacy. Red caviar became more and more popular, firstly among royalty, then among commoners. But there are two sides to this coin: it became increasingly difficult to buy red caviar because of the high prices.

Our Salmon Roe Assortment

Fish & Caviar offers a wide selection of red caviar for sale. Here, you can find everything from chum salmon to sockeye salmon caviar. Let’s take a closer look at the assortment.

Pink Salmon

If money is of concern, Pink Salmon will be one of the most affordable options. It does not mean that pink salmon caviar is inferior to other types; it has a unique, rich taste and is considered a delicacy. The only difference is size and color. One egg is about three to five millimeters in diameter. A lighter shade is found only in chum, so, if you see light orange eggs of medium size, it is definitely pink salmon caviar.

Chum salmon

Chum salmon caviar has an average price tag, which makes it quite affordable, as well. It is the largest and lightest caviar. It can be easily identified by its uniform, light orange color and the size of the eggs, which are five to seven millimeters in diameter. Chum salmon caviar is often mistaken for king salmon because of the similarity in size. The most exceptional features of this type of caviar are its fattiness and delicate flavor.

Coho salmon

Coho salmon caviar is similar to pink salmon caviar in price. These eggs are about three to four millimeters in diameter and dark maroon in color. However, if the shade of your coho salmon caviar is slightly different, there is no need to worry – the production process may cause some variation in color.

Sockeye salmon

Sockeye salmon caviar consists of small, reddish eggs with a diameter of two to three millimeters. This type is easy to recognize by its size and dark orange color, although the color of the eggs may vary. Sockeye salmon caviar has a pronounced fishy smell and bitter taste. The price is usually comparable to that of pink salmon caviar.

Red Caviar Prices

The price of red caviar depends on many factors, such as the type of fish, the region where it is sold, and so on. The most iconic and popular – pink salmon roe – starts at about 40 USD per two pounds. However, prices for different types of caviar vary widely. So, what determines the price of this delicacy?

  • First, caviar is a non-renewable product. An adult fish, which produces the caviar, lives about 20 years and lays eggs only once in its life, unlike chickens, which can lay eggs many times.
  • Secondly, caviar is a rarity. This factor has a big impact on the price. The caviar you are eating could have become a new fish. Also, do not forget that the most valuable species of fish that produce caviar are on the verge of extinction.
  • Finally, caviar is always in great demand. This is a direct consequence of low supply, because high-quality caviar is not easy to find.

How to Judge the Quality of Caviar

The most expensive types of caviar don’t have any added dye or artificial preservatives. The price of salmon roe depends on the production process; i.e., the cheaper the product, the more likely it is that the caviar was frozen or over salted. You might be tempted to go for more inexpensive caviar, the eggs are perfectly round and have the same size and bright color – but be careful: more often than not, this turns out to be imitation caviar. If it is not an imitation, it is most likely made from frozen raw materials. Beware of bad caviar as it often tastes bitter, and by buying it you will only be wasting your money.

Health Benefits of Red Caviar

Caviar is a unique product that can benefit all age groups. You will do your body good by eating caviar in reasonable quantities

Salmon roe caviar has plenty of vitamins and minerals. It contains several B vitamins (B1, B2, B5, and B9 or folic acid), vitamins D, A, and E, as well as calcium, potassium, magnesium, iron, phosphorus, iodine, and Omega-3 polyunsaturated fatty acids, which are not produced by the human body. Also, red caviar is a source of easily digested protein. For example, 100 grams of red caviar contains almost double the amount of protein in a similar quantity of beef or cottage cheese.

Eating caviar benefits you by:

  • Boosting the immune system;
  • Strengthening heart and blood vessels;
  • Reducing the risk of cancer;
  • Improving eyesight;
  • Strengthening joints;
  • Giving added energy.

How to Eat Caviar

There are no strict rules for eating red caviar. However, you might want to act in accordance with certain guidelines of fine dining:

  • Have a small serving, even if its exquisite taste excites you. You will look ignorant if you start to eat caviar by the spoonful.
  • Take small bites of an appetizer. It’s an expensive product, and it should be appreciated delicately, not by shoveling it in.
  • Don’t bite into the caviar grains – it ruins the taste. Instead, press your tongue against the roof of your mouth to get the full flavor.

As for serving it, caviar can be put on savory pastries like tartlets, slices of bread, crackers, etc., in small portions with a little butter or soft cheese, greens, olives, cucumber, avocado or green peas. You may also try red caviar quail or small chicken eggs. For this, you have to cut the hardboiled egg in half, remove the yolk and put caviar in its place. You can use greens, cheese, olives, etc. as a garnish.
